Atlantic Kelp

500g chicken breast

3 tomatoes

1 onion

6 good sized mushrooms

3-4 Cloves Garlic

Chicken gravy

3-6 Chilli Peppers

10g Kombu

Hot pepper sauce.

Virgin olive oil

Dice the chicken breast and add to a pan filled with a generous amount of hot virgin olive oil.

Immediately add the mustard (approx 3 teaspoons), a generous amount of pepper and stir in to the meat.

Leave to cook stirring occasionally until meat is sealed (white).

Add the chicken Gravy.

Add the finely chopped Kombu.

After 5 minutes add the mushrooms.

After 5 more minutes add the tomatoes, onions, garlic, Chilli Peppers.

Top up with gravy sauce as required and add a dash of hot pepper sauce.

Leave for 5 more minutes, stir and taste.

Heat through but don’t leave to simmer (vegetables should be al dente).

A quick hearty and healthy meal that is ready in a thrice, can be served with rice, potatoes or even chips and will feed 4-5 people on the one go or, as was my case, a hard working, time limited person working away from home.

For those of you that don’t like a bit of a ‘nip’ to their meal the spicier ingredients can either be adjusted or left out completely.
